I think I have nothing useful to say except to confirm that welt pockets do, in fact, SUCK. I've never yet managed to successfully and not have them look like ass.
As for pre-treating wool, I just... don't? The most I ever do is give it a good steam before I cut, but I'm super lazy and only really do that for woolens. I almost never wash wool things though, so YMMV.
